מ'וויל זיך עלטערן נאָר מ'וויל נישט זײַן אַלט

transliterated
m'vil zikh eltern nor m'vil nit alt vern

the proverb actually means
you want to grow older but you don't want to be old

translated to Hebrew
רוצים להזדקן אבל אף אחד לא רוצה להיות זקן


similarly
אַלט זאָל מען ווערן אָבּער נישט זײַן

transliterated
alt zol men vern ober nit zayn

in English
one should become old but not be old

in Hebrew
צריכם להזדקן אבל לא להיות זקן
